Pink Taco at Hard Rock Hotel & Casino takes guests south of the border and transforms into the ultimate Sunday fiesta with the launch of its weekly brunch beginning April 13.

A pit stop on the way to Hard Rock Hotel’s famed REHAB dayclub or just a fun hang out with friends, Pink Taco adds the perfect amount of heat to Sunday brunch. The mega-hip Mexican cantina fuses standard breakfast cuisine with its signature Mexican-American flare. In addition to a selection of Frio (cold) and Caliente (hot) menu items as well as Ensalada y Sopa (salad and soup), complimentary pastries, sopapillas and spiced tropical fruit will be provided to each table.

Signature menu items include Machaca Deviled Eggs served over a tortilla strip nest; Chilaquiles, baked vegetables, Mexican cheese blend, corn tortilla chips and salsa roja served with scrambled eggs; Mini Lobster Quesadilla, fresh Maine lobster, Mexican cheese blend served in a warm tortilla; Pollo Churrasco Skewers; Beef Machaca Empanadas with lime and pique sauce; Goat Cheese Enchiladas with Asadero cheese, salsa verde, pico de gallo and iceberg salad; Chicken Tortilla Sopa; Esquites Asados with roasted corn, cotija cheese and jalapeno-lime mayo; and Chicken & Waffle.

Other favorites include Angry Dogs, chorizo sausage with vegetable escabeche with nopales relish; Fried Avocado with lime aioli; Chorizo Sliders; Plantain & Nuts French Toast; Blue Corn Pancakes; Sweet Corn Tamales, corn masa with pico de gallo and sour cream; Oysters served with a tequila-kiwi salsa verde; Bacon-wrapped Jalapenos with a side of smoked ranch and more.

Patrons can enhance their experience with a selection of liquid libations including Corona-rita ($15), Sriracha Bloody Mary ($13), shots ($6) and Bottomless Mimosas or Donkey Punch ($9.99). Sure to get any party started, the Donkey Punch is a refreshing and sweet swirl of Malibu Rum, Chambord Black Raspberry Liqueur, sour mix, simple syrup and a splash of cranberry juice and lime juice. Non-alcoholic Aguas Frescas ($6), a traditional beverage mixture of water and fruit, is also available.

Pink Taco’s Mexican cantina girl will also be making her rounds to each table and encouraging patrons to join the “Clean Plate Club.” Any guest with an empty plate will receive complimentary Mexican candies.

Pink Taco Brunch is available for $24.99 per person for all-you-can-eat or $4 – 10 per plate. Brunch is 9 a.m. to 4 p.m. on Sundays only.
